Finca de Garces is located on the slopes of Mt. Kalatungan, Bukidnon, well recognized for being one of the few sustainable coffee farms in the Philippines. It is focused on producing the best quality and authentic beans through careful and scientific natural processes.
This Catimor was processed via double fermentation (DF), a 2-part fermentation method that is very popular among Kenyan coffee farmers. First part is when farmers pulp the cherries immediately after harvest. The mucilage-coated cherries are then placed in fermentation tanks with very little contact with water for 12 to 24 hours. Second fermentation is restarting the fermentation process by repeating the first part of the method.
