Adrian Lasso represents the new generation of Colombian specialty coffee producers, blending youthful innovation with deep-rooted family tradition at Finca El Diviso in Bruselas, Pitalito. Located at 1,800 meters above sea level in one of Huila's most prestigious coffee-growing microclimates, El Diviso spans 16 hectares where the Lasso brothers have replaced conventional methods with advanced techniques learned at SENA, Colombia's leading coffee school. Their partnership with Cata Export has refined their post-harvest approach, earning international recognition with lots consistently scoring above 86 points and reaching European specialty markets and competitions.
This Aji natural showcases Adrian's meticulous approach to controlled fermentation and his commitment to highlighting ultra-rare varietals. The Aji varietal, also known as Bourbon Aji or Chili Bourbon, traces its genetics directly to Ethiopia, the birthplace of Arabica coffee, and gained prominence after placing 6th in Colombia's Cup of Excellence competition. For this lot, Adrian employed an extended natural process where fully ripe cherries were dried whole on raised beds for 3 to 6 weeks, with constant turning and temperature monitoring to develop maximum fruit complexity while maintaining clarity. The result is an explosively tropical profile featuring mandarin orange, mango, and strawberry notes with delicate rose florals. The natural method, on the other hand, amplifies the varietal's inherent melon-like sweetness and bergamot-like aromatics, creating a cup that rivals Gesha's complexity.
