The Peterson family has owned and operated Hacienda La Esmeralda since 1967, when Swedish-American banker Rudolph A. Peterson acquired the estate as a retirement venture. In the 1970s-80s, his son Price transitioned the property from cattle ranching to coffee cultivation, building on Boquete's long coffee heritage.
This particular lot underwent a 72-hour anaerobic natural process, a testament to the Peterson family's ongoing experimentation with controlled fermentation. Grown at 1,800 meters above sea level in Boquete's legendary highlands, this micro-lot pushes the boundaries of natural processing by introducing extended anaerobic fermentation before drying. The result is a wine-like complexity with distinctive notes of grapes, lavender, and mandarin orange, a profile that showcases how deliberate oxygen management amplifies Gesha's inherent florals while adding layers of fruit intensity.
