In 2023, the World Barista Championship was won by his son Boram Um using Fazenda Um Pink Bourbon and the Brazilian Brewers Cup by Rubens Vuolo using Fazenda Um coffee. Stefano’s coffees stand out because he insists on selective picking, clean lot separation, and transparent partnerships that reward quality with fairness, validating every experimental process on the cupping table where design follows sensory feedback rather than marketing narratives.
This Siriema lot employs dark room drying, a controlled natural process that ferments whole cherries in temperature-regulated rooms with reduced light exposure. Unlike patio sun-drying, this method slows the drying rate and stabilizes temperature fluctuations, producing cleaner fermentation profiles and preserving subtle sweetness. The result is sweetness without aggressive fruit intensity.
