Anaerobic fermentation seals cherry inside oxygen-free tanks before any drying begins. With oxygen removed, the microbial activity inside those tanks shifts. Lactic bacteria take over from the aerobic yeasts that lead a traditional ferment. New volatile compounds form. Sweetness amplifies. Aromatics intensify.

The Farm

Finca de Garces sits at 1,400 meters in the highlands of Bukidnon - a multi-generational family farm stewarded by the Garces family. Volcanic soils and cool mountain air slow cherry maturation at this elevation, concentrating sugars and building the complex sweetness that is making Bukidnon one of the Philippines' most promising coffee regions.

Anaerobic fermentation seals cherry inside oxygen-free tanks before processing. The absence of oxygen shifts the microbial activity during fermentation - lactic bacteria dominate where aerobic yeasts normally lead, producing distinct volatile compounds and amplifying sweetness and aromatics.

Combined with honey-style drying, where the mucilage stays intact, the result is FDG's most concentrated expression. Apple depth, black cherry richness, chico-fruit sweetness - aromatic, complex, nothing subtle about it. A microlot from the farm's experimental track, produced in limited quantities for drinkers who want the farm at its boldest.

The Cup

Combine that fermentation with honey-style drying, where the mucilage stays on the bean as it rests on the patio, and you get this lot. The Ethiopian Landrace varietal, already the most complex thing the farm grows, taken to its boldest possible expression.

This is a microlot from Finca de Garces' experimental track. Limited quantities. Built for drinkers who want the farm at its loudest.

Apple depth on the front, the kind that sits between fresh fruit and baked. Black cherry richness through the middle, almost compote-like. Chico, the soft caramel-fruit sweetness of the Philippine sapodilla, carrying the finish. Aromatic, complex, layered. Nothing subtle about it.
