Finca de Garces is located on the slopes of Mt. Kalatungan, Bukidnon, well recognized for being one of the few sustainable coffee farms in the Philippines. It is focused on producing the best quality and authentic beans through careful and scientific natural processes.
Inspired by the biodynamic way of winemaking, this coffee was harvested during the full moon phase. It is believed that this process yields a sweeter and riper cherry while keeping in harmony with nature. Following harvest, the cherries undergo a cold fermentation process, where cherries are sealed in a tub and submerged in water to ferment at a controlled temperature. After 36 hours, the fermented cherries are slowly dried in a solar facility with regulated temperature and humidity.
