Jhoan Vergara represents the evolution of Colombian specialty coffee, combining family tradition with bold experimentation at Finca Las Flores in San Isidro, Huila. Founded in 1990 by his parents Edilberto Vergara and Nubia Ayure—both children of coffee growers from Cundinamarca—Las Flores began with just 2 hectares and has grown to 16 hectares of meticulously managed coffee cultivation. The farm sits at 1800 meters above sea level, where cool mountain temperatures and volcanic soils create optimal conditions for developing complex fruit-forward profiles. 

This Java natural showcases Jhoan's mastery of fermentation science and his commitment to highlighting rare varietals. The Java varietal, originally brought to the Americas from Indonesia, thrives in Huila's high altitude microclimates, producing dense cherries with remarkable sweetness potential. For this lot, Jhoan employed an extended natural process with carefully controlled fermentation, allowing the whole cherries to dry slowly while developing intense fruit complexity. The cup boasts notes of lavender, peach, and strawberry, a testament to both the varietal's unique characteristics and Jhoan's precise processing technique.
