Colombia Fruit Forward Berry Ensemble Java Natural

Sweet and floral, from a varietal originally brought over from Indonesia and rarely grown in Colombia at all.

It's an extended natural process: whole cherries dry slowly under carefully controlled fermentation, developing more fruit complexity than a standard natural allows.

Grown at 1800 masl in Huila, Colombia, at Finca Las Flores, a farm Edilberto Vergara and Nubia Ayure started on 2 hectares in 1990 and grew to 16. Notes of lavender, peach, and strawberry come through clean and sweet.
