Colombia Tropical Fruit Forward Lush Aji Natural

Tropical and floral, from a varietal rare enough that most coffee drinkers have never tasted it.

Aji traces its genetics back to Ethiopia and placed 6th in Colombia's Cup of Excellence. This lot is dried whole on raised beds for 3 to 6 weeks, with constant turning and temperature monitoring — a much longer natural process built to develop more fruit complexity than a typical few-week dry.

Grown at 1800 masl in Huila, Colombia, by Adrian Lasso at Finca El Diviso. Notes of mandarin orange, mango, rose, and strawberry carry a genuinely tropical character.
