Colombia Jhoan Vergara Sudan Rume Natural

A rare Ethiopian landrace, grown in Colombia and dried inside its own fruit.

Jhoan Vergara grows Sudan Rume in small quantities at Finca Las Flores in Caldas. For this natural lot the ripe cherries are dried whole, skin and fruit still on, before the seed is hulled out. Drying inside the fruit is what gives a natural its fuller fruit character, and here it shows as a rounded, honeyed sweetness.
